  • 1 lb ground lamb or beef
  • 1 large onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon turmeric
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1 package (10-12 pieces) thin flatbreads (like lavash or pita bread)
Instructions

Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened and translucent. Add the ground meat to the skillet and cook, breaking it up with a spoon, until browned. Stir in the cumin, coriander, cardamom, cinnamon, turmeric, salt, and pepper. Cook for another minute or two to allow the spices to bloom. Remove the skillet from heat and stir in the chopped cilantro and parsley. Let the meat mixture cool slightly. To assemble the Masub: Lay a flatbread on a clean work surface. Place a generous spoonful of the meat mixture in the center of the flatbread. Fold the sides of the flatbread over the filling to enclose it. Roll the flatbread tightly to form a cylinder. Repeat with the remaining flatbreads and filling. Heat a large skillet over medium heat. Cook the Masub rolls in the skillet, turning occasionally, until golden brown and heated through. Serve the Masub hot with your favorite dipping sauces, such as hummus, yogurt sauce, or harissa.
